Bill Mortola is a seasoned professional with extensive experience in food safety and quality assurance. Currently serving as the Sr. Director of Food Safety and Technical Services at E. & J. Gallo Winery since July 2001, Bill oversees quality assurance processes, including microbiology, Good Manufacturing Practices (GMPs), Hazard Analysis Critical Control Point (HACCP) protocols, and quality systems compliant with ISO 9000, BRC, and IFS standards. Prior to this role, Bill was the Plant Manager at Tri Valley Growers from June 1982 to June 2001, specializing in the thermal processing of high-acid fruits and juices. Bill holds a Master of Science degree in Biological Sciences from the University of the Pacific and a Bachelor of Arts degree in Biological Sciences from the University of California, Berkeley.
